TV Dinner - Chimichangas


Oh so simple and oh (MY GOD) so good!

INGREDIENTS:

  • 400 gr Ground Beef
  • 8 Big Flour Tortillas
  • 200 gr Yellow Cheese, Grated
  • 1 Medium Yellow Onion, Diced
  • 1 tomato, chopped (or one box of chopped tomatoes)
  • 1 Red Pepper (or Chili), finely chopped
  • Salt & Pepper
  • Oil for deeeeeeeep frying
  • Toothpicks (not plastic)
  • Red Taco Salsa (buy or chop onion, tomato, chili and parsley, top with lemon juice and leave in fridge).
  • Guacamole (buy or mix mashed avocado, chopped red onion, lemon juice, chili, salt, pepper and leave in fridge, then add chopped tomato before serving)
  • Sourcream (panna acida)
  1. Fry onions in a pan, then add beef and fry until brown.
  2. Add tomatoes, chopped peppers and spices and let it simmer for 5-10 minutes.
  3. Put meat and cheese on a tortilla, then fold (bottom, side, top) and close with a toothpick. Voila, it's a chimichanga.
  4. Heat the oil in a deep frying pan. It's hot enough when it starts to boil around wood.
  5. Fry the chimichangas on each side until they're golden. Carefully remove from the oil and leave to dry on kitchen paper.
  6. Serve with salsa, sourcream and guacamole.
  7. It's fucking delicious.
